DAN BUGGE - RESTAURANTEUR & PIKE PLACE VETERAN

Dan Bugge is a Seattle institution with decades of experience at Pike Place Market. Dan’s journey began behind the seafood counter at the world-famous Pike Place Fish, where he spent a decade throwing fish and mastering the art of hospitality. His deep connection to the Market and passion for great food led him to take over Matt’s in the Market, transforming it into one of Seattle’s most beloved dining destinations.

Not one to stop at just one successful restaurant, Dan expanded his culinary footprint with Radiator Whiskey, a spirit forward cocktail bar & eatery known for its bold southern flavors and whole pig ‘Beast Feast’. He later launched White Swan Public House, a waterfront gem celebrated for its fresh seafood and vibrant atmosphere of Lake Union. And in late Spring 2025, he’ll open a second Radiator Whiskey Ballard location, continuing his tradition of crafting memorable dining experiences.

Dan’s roots in Pike Place Market run deep, and his commitment to Seattle’s food scene is undeniable. Whether it’s a perfectly seared scallop at Matt’s, a smoked maple old fashioned at Radiator, or oysters on the waterfront at The White Swan, his restaurants embody the spirit of the city—authentic, welcoming, and damn delicious.
